YUMMY YUMMY! This is one of how favorite dishes, well at least the hubs and mines, the kids not so much. When I started making this recipe I would stuff the peppers and bake them but not anymore. We actually enjoy the stuffing not being stuffed into the peppers and we eat it with chips and let me tell you, its delicious! I even slap on some avocado.
Ingredients needed:
- 2-3 Peppers and chop them up
- 1 bag instant Uncle Ben Long Grain Rice
- Parmesan Cheese
- Pepper
- Dried onion or a 1/2 an onion chopped or less/more depending how much you like onion
- 1 pound Mild Sweet Sausage
Step One: Brown the chopped up peppers and onion flakes or chopped up onions.
Step Two: Remove the pepper mixture from the pan and then start browning the sausage using the same pan. This way the juices from the peppers and onions will soak into the meat as it cooks giving it some extra flavor.
Step Three: Once the meat is browned add the pepper mixture back into the pan with meat. Mix them together on a lower heat. While this is happening, pop the rice pouch into the microwave for 90 seconds. Once that is done at the rice to the pan.
Step Four: Add Parmesan cheese and some pepper if you work like and give it all a good mix. I do not measure of the amount of Parmesan that I use I just eye ball it. Add as much or as little as you would like.
Step Five: Enjoy! I added some avocado to my bowl and sometimes some chips to give it a little extra crunch.
